Beef Stir Fry

1  lb beef sirloin, flank or skirt steak cut into 2-inch strips
2  tbsp of olive oil or avocado oil
1 1/2 cups of broccoli, cut into small pieces
1 small onion
1 cup fresh mushrooms, sliced 1 can whole mushrooms
1  red bell pepper, sliced into small pieces
2  stems of celery chopped small
2 carrots thinly sliced
2 cloves of garlic minced
2 tbsp of soy sauce
1 tsp of white sugar
Salt and pepper to taste

Once you have all your ingredients chopped, sliced and minced heat up a deep frying pan, or wok if you have one, on medium-high heat, and add oil. Once the oil is hot add the beef, stirring and turning over until browned on all sides. This will take 10 minutes or so. Add the garlic at the last minute, being careful not to burn. Remove the beef when browned and set aside.

Add a little more oil to the pan, keeping it medium-high, then add the onion, carrot, and celery. Cook for about five minutes and add the remaining veggies. Cook, tossing and stirring for another five minutes, and return the beef to the pan, adding soy sauce and sugar. Cook for five minutes and taste, seasoning with salt and pepper.

Prepare everything for the pan before you turn on the heat.
Cook on medium-high heat to obtain the sear.
