Barbequed Caribou Ribs

Difficulty: easy Prep Time: Ten Minutes Total Time: More than 1 hour
3 lbs caribou ribs, cut in pieces
1 cup ketchup
2 tbsp vinegar
2 tbsp brown sugar
1 tsp salt
1/4 lb salt pork, diced
1 tbsp prepared mustard
2 tsp lemon juice
1 onion, chopped
1/4 tsp pepper

Brown ribs in salt pork. Place in casserole dish. Mix other ingredients and cover over ribs. Bake at 325°F for 2 1/2 hours. Baste sauce over ribs frequently.
