Baked Flippers
3 slices fat pork
3 carrots
1 parsnip
2 medium onions
6 potatoes
1 turnip
salt and pepper, to taste
Topping:
2 cups flour
1/2 cup shortening
1 tsp salt
2 tsp baking powder
water to make stiff dough
Remove all fat from flippers carefully. Wash and cut into serving pieces. Do not parboil. Fry out salt pork and brown flippers in this. Add a little water and let simmer until partly tender. Add chopped vegetables, except potatoes. Season and add 1 cup water. Cook about 1/2 hour and then add potatoes. Cook for another 15 minutes, adding a little water if needed. Mix all topping ingredients together using enough water to make a stiff dough. Place topping flat over the pan cover and cook 15 - 20 minutes. Serve when cooked.
