Bacon-Apple Stuffing

1/4 lb bacon, diced
1 medium onion, diced
2 stalks celery
3/4 cup diced fresh/frozen cranberries
2 Granny Smith apples
1/2 loaf stale white bread, cubed
1 cup chicken stock

1 cup chicken stock
Fry bacon until crisp, drain fat and reserve 1/4 cup (discard remaining fat). Sauté onion, celery, cranberries and apples in the reserved fat until onion is slightly tender. Mix bacon and sautéed ingredients with the bread and add enough stock to moisten bread. Put in a casserole dish, cover with foil and bake at 375°F for 30-45 minutes or until stuffing is heated through and edges start to crisp.
