Apple-Fennel Slaw

1 tart apple, peeled and cored, julienne
1 cup fennel (the bulb), julienne
1 cup red onion, sliced very thin
1 tbsp fennel fronds, roughly chopped
For the dressing:
1/2 tsp fresh garlic, minced
1/4 cup white wine vinegar
2 tbsp white sugar
1 tsp sesame seeds
1/2 tsp black mustard seed
2 tbsp extra virgin olive oil
1 cup fennel (the bulb), julienne
1 cup red onion, sliced very thin
1 tbsp fennel fronds, roughly chopped
For the dressing:
1/2 tsp fresh garlic, minced
1/4 cup white wine vinegar
2 tbsp white sugar
1 tsp sesame seeds
1/2 tsp black mustard seed
2 tbsp extra virgin olive oil
Whisk the dressing ingredients together in a medium-size bowl. Add apple, fennel, onion and fennel fronds, and toss to coat. Let marinate for one hour in the fridge, stirring occasionally, before serving.
Yield: 3-4 servings
