60 Minute Supper

Difficulty: easy Prep Time: Five Minutes Total Time: Under an hour
1 lb lean ground beef
1 small onion, chopped
1/2 red pepper, diced
1 tsp garlic powder
1 tsp pepper
1 cup stewed tomatoes with juice
1/2 cup ketchup
1 cup water
1 cup quick cooking rice
1 cup corn
1 cup shredded cheese (mozzarella or Tex-Mex)

To a large skillet add ground beef, onion and red pepper. Season with garlic powder and pepper. Cook over medium heat until beef is no longer pink. Add tomatoes and ketchup; stir until well combined. Stir in water and rice. Cook over medium heat until liquid is starting to be absorbed and rice has softened. Remove from heat and stir in corn and cheese. Transfer to a 1.5 L casserole dish and bake, covered, at 325F for 30 minutes. Remove from oven and let sit for 5 minutes before serving. Serve with cheesy garlic bread or soft rolls.
