Cast Iron Campfire Cookin’

Whether you’re cooking at the campsite, the cabin or over your backyard pit, you can make just about anything you crave with one well-seasoned cast iron skillet. Check out six skillet recipes in this month’s Downhome that’ll get you all fired up!  Here’s one to get started:

Breakfast Skillet
2 tbsp vegetable oil
2 medium potatoes, peeled and grated
¼ tsp salt and pepper (to taste)
1/2 red bell pepper, sliced or diced
1 small yellow onion, peeled and diced
1/2 lb bacon, diced
1 tbsp maple syrup
2-3 large eggs
Sliced green onions, for garnish

Warm the skillet over the campfire or BBQ. Toss potatoes in oil, season them with salt and pepper, and add them to the pan. Cook about 5 minutes, turning them as they lightly brown on the bottom. Stir in onion, peppers, bacon and maple syrup. Cook, stirring occasionally, until bacon is crisp and vegetables are tender. Crack two eggs over the top; season with salt and pepper. Cover skillet and cook until eggs are done the way you like them (check on them every couple of minutes). Garnish with green onions and serve.
Makes 2-3 servings.
