Chicken Casserole Newfoundland-Style
1 can corn nibblets
1 can cream of chicken soup
1 cup of mayonnaise
1 bag of plain potato chips (the larger the bag the more casserole)
Remove chicken from the bone, cut into small pieces and place in a large bowl. (NOTE: Make sure chicken was boiled in large pot on stove for at least 1 hour beforehand). After placing the chicken in the bowl, put in the corn, soup, mayonnaise and potato chips. It helps if the chips are crushed up first. Mix all ingredients together well. (It may look unappetizing, but I assure you that it is quite delicious!) Turn mixture into an ungreased baking dish and bake in a preheated 350°F oven for 20 minutes. Remove, let cool and serve.
