Breaded Salmon Fingers
1 lb flour
4 eggs
2 cups 2% milk
2 tsp salt
1 tbsp salt seasoning
½ tsp pepper
½ tsp onion powder
1 tbsp savoury
1 ½ lbs fine bread crumbs
¼ cup lemon (or lime) juice
Remove both fillets from salmon. Slice cleaned salmon into 1-inch strips, leaving skin behind. In one bowl or pan, place flour. In second bowl combine eggs, milk, salt, salt seasoning, pepper, onion powder and savoury; mix well. In third bowl, place bread crumbs. Roll salmon fingers in flour, place in egg mixture, then in bread crumbs; and place, single-layered, on a baking sheet or flat surface. Repeat until all fingers are used. Deep fry fingers at 350°F for 5 min. or until golden brown. Then place pan of strips in oven at 300°F for 10 min. Place fingers on a garnished serving tray and sprinkle with lemon or lime juice.
