Apple-Partridgeberry Jam

3 Granny Smith apples, peeled and grated
2 cups frozen partridgeberries
1 cup dark brown sugar
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
3 tbsp red wine/port
1/4 cup cold water
1 tbsp cornstarch

1 tbsp cornstarch
Mix everything (except water and cornstarch) together in a heavy bottomed pot and cook over medium heat. Allow everything to come to a gentle boil. Once it’s reduced to the point that it’s starting to get a little syrupy, mix the water and cornstarch together and add it to the jam. Once it returns to a boil, allow it to boil for about 10-15 seconds and remove from heat.
Yield: 2 – 2 ½ cups
