Pork Mojo

Difficulty: easy Prep Time: Fifteen Minutes Total Time: More than 1 hour
6 pork chops, thick cut centre
3 tbsp extra virgin olive oil
2 tbsp fresh mint, chopped (for garnish)
Marinade:
10 garlic cloves, minced
1 tsp celery salt
3 tsp cumin, ground
2 tsp black pepper
1 tbsp dried oregano leaves
1/2 cup orange juice
1/3 cup lime juice
1/3 cup extra virgin olive oil

Mix up the marinade, set aside 1/3 of it and put the remaining 2/3 in a large sealable bag with the pork. Marinate the pork for about 2 hours.
Preheat oven to 375°F.
Heat the oil in a large, frying pan. Remove the pork from the bag and discard used marinade. Once the pan is hot, sear the pork on both sides. Place it in a 9"x13" casserole dish, pour the reserved marinade over the top and bake pork in the oven until internal temperature of the pork reaches 155°F (about 15-20 minutes). Top with fresh mint. Serve immediately with lime wedges and rice.
