Strawberry Pretzel Pie

Crust:
3 cups pretzels, crushed
1/2 cup butter, melted
1/2 cup dark brown sugar
2 tbsp flour
1/2 tsp Chinese five spice

Filling:
5 cups fresh strawberries, hulled and quartered
1 (85g) box strawberry Jell-O powder
3/4 cup white sugar
1/4 cup cornstarch
1 3/4 cup cold water
1 tsp pure vanilla extract

Preheat oven to 350F. Mix crust ingredients together and press into a pie pan. Bake for 20 minutes (pretzels will start to darken and the crust will be firm). Set aside to cool.

Place strawberries in a large bowl and set aside.

Mix the Jell-O, sugar, cornstarch and water in a saucepan and bring to a boil over medium-high heat, stirring occasionally to ensure the sugar has dissolved. Allow the mixture to bubble for about 20 seconds and remove from heat. Stir in vanilla and cool on a rack, stirring occasionally, until it starts to thicken and become less runny.

Mix in the strawberries and spoon them into the pie shells. Pour the remaining liquid over the top or into any gaps you see. Cover and allow to set overnight in the fridge. Serve with coconut cream or whipped cream. Yield: 1 pie
