Honey-Balsamic Moose Kebabs

Difficulty: easy Prep Time: More than 15 Minutes Total Time: Under an hour
3 cups moose, cut in 1" cubes
1 zucchini, sliced 1/2" thick
2 large onions, cut into chunks 1/2" thick
1 bell pepper, cut into 1" pieces
12 button mushrooms, halved
1/2 cup honey
1/2 cup balsamic vinegar
1 tbsp fresh garlic, minced
1 tsp fresh ginger, grated
1/2 tsp black pepper
1/2 tsp salt

Blend together: honey, vinegar, garlic, ginger, pepper and salt. Set aside.
Soak 12 wooden skewers in water for 30 minutes. String the vegetables and meat on the skewers, starting and ending each skewer with a mushroom half. Allot approximately 2 of each veggie and 3-4 pieces of meat per skewer. Place all the kebabs in a casserole dish or on a sheet pan and pour the glaze over them, turning them to ensure they are well coated. Allow them to sit at room temperature for 10 minutes before grilling.
Preheat BBQ to about 3/4 heat. Grill kebabs until they are nicely marked on all sides and the veggies start to soften. If the veggies start to get too dark before the meat is cooked to your liking, you can put them on a sheet pan in the oven for an additional 10 minutes or so.
Yield: 12 kebabs
