Escargot
1/4 cup butter
2 tbsp fresh garlic, minced
1/2 cup shallots, sliced thinly
1/3 cup white wine
1 1/2 cups whipping cream
1/2 tsp black pepper
1/4 cup grated Parmesan
1/4 cup fresh parsley, chopped
Melt butter over medium heat. Sweat garlic and shallots until shallots are translucent. Add snails and reduce heat to low. Cook for about 5 minutes to warm the snails through. Turn heat to high and once it starts to sizzle, add wine and shake the pan to deglaze. Add cream and pepper. Reduce heat to medium and allow the cream to reduce a little. Add Parmesan and parsley. Stir to combine and remove from heat. Serve immediately. Yield: 2 servings
