Black Bean Burrito

Difficulty: easy Prep Time: Ten Minutes Total Time: 30 Minutes or Less
2 tbsp extra virgin olive oil
2 cups sweet potato, small dice
1 cup red onion, small dice
1 tbsp fresh garlic, minced
1 cup canned black beans (mash
half and mix together)
1/2 cup tomatoes, small dice
1/4 cup vegetable stock
1 tsp ground cumin
1/4 tsp cayenne
1/2 tsp ground coriander
1/4 cup fresh cilantro, chopped
1/2 cup mozzarella, grated
2 flour tortillas (12”)
1 tbsp vegetable oil

Heat oil over medium heat and add the sweet potato, onion and garlic. Sweat until the onions are tender. Add beans, tomatoes, stock and spices (except cilantro) and cook over high heat until the sweet potatoes are nearly cooked through and the stock is nearly gone. Remove from heat and stir in the cilantro. Divide mixture between the two tortillas, top mixture with cheese and roll tightly. Heat vegetable oil over medium-high heat and fry the wrapped burritos (seam side first) until they have an attractive golden crust on both sides. Serve with sour cream, if desired.
