Green Lentil Dahl

Difficulty: easy Prep Time: More than 15 Minutes Total Time: Under an hour
1/4 cup butter
1 cup onion, minced
4 tsp fresh garlic, minced
1" fresh ginger root, peeled and grated
1 bay leaf
1/2 tsp turmeric
2" cinnamon stick
1 tsp garam masala
1 tsp chili flakes
1/2 tsp ground cumin
1 1/4 cup green lentils, picked clean, rinsed & drained
6 cups vegetable stock
3 tbsp lemon juice
Naan bread for serving

Melt butter and sweat onion over medium heat until translucent. Add garlic, herbs and spices. Cook 2-3 minutes to soften garlic. Add lentils and cook for 2 minutes. Add stock and simmer until the liquid has been soaked into the lentils (20-30 minutes). Stir often and add additional hot water if you prefer a more runny consistency. Once you have reached the desired consistency (either a stew-like mixture or a paste - your preference), add the lemon juice and season to taste. Remove the bay leaf and cinnamon stick before serving. Serve hot with naan bread. Yield: 2-4 servings
