Chicken, Sweet Potato & Quinoa Stew

2 chicken breasts, medium dice
2 tbsp extra virgin olive oil
4 cups sweet potato, medium dice
2 cups onion, medium dice
1 cup carrot, medium dice
1 cup celery, medium dice
4 tsp garlic, minced
1 tsp fresh thyme, minced
3/4 cup quinoa, uncooked
1/4 cup white wine
4 cups chicken stock, hot
1/2 cup skim milk, hot
1 cup water, hot
Salt & pepper to taste

Salt & pepper to taste
Brown chicken in oil over medium-high heat. Add vegetables, garlic and thyme, and sweat (on medium heat) until the onion is translucent. Add quinoa and cook for 5 minutes. Add wine to deglaze the pan and immediately add the hot stock. Simmer until the quinoa is cooked through. Add the hot milk and remove from heat (add hot water if you feel it needs to be thinned). Season to taste with salt and pepper. Yield: 4-6 servings
