Cranberry Sauce

1 (600 g) bag frozen cranberries, thawed
5-inch stalk fresh rosemary
2 tsp fresh garlic, minced
1/4 cup brown sugar
1/4 cup maple syrup
1/2 tsp salt
1/4 tsp black pepper

Place all the ingredients (including the juice from the bag of cran-berries) in a heavy-bottomed pot and place over medium-high heat. Once the liquid begins to boil, reduce the heat to medium-low and cook until the berries have broken down and the mixture resembles chunky jam. Let cool. Discard rosemary stalk. Yield: Approx. 2 cups
