Newfoundland Marsh Berry Tea Buns
3 tsp baking powder
3/4 cup butter (softened)
1/2 cup sugar
1 egg
1 cup milk
1 tsp vanilla
1 cup marsh berries fresh or frozen, or partridgeberries or blueberries
Blend and rub together the first 4 ingredients (you can mix in the food processor if desired) Beat together egg, milk and vanilla. Stir berries into the dry mixture then stir in the milk mixture. Put dough onto a floured surface. Roll out or pat dough to 1/2 inch thick and cut with round cookie cutter or glass approximately 2 inches in diameter. (or whatever size you would like) Put on greased large cookie sheet, usually 5 across and 8 down the length of the sheet, buns are placed on sheet touching each other. Bake in 375F degree oven for 12-15 minutes. To brown the tops of the buns you can turn on the broiler for approximately a minute or so.
