Blueberry-Banana Muffins

Difficulty: easy Prep Time: Fifteen Minutes Total Time: Under an hour
2 cups all-purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
4 overripe bananas
1 cup brown sugar
3/4 cup unsalted butter, melted and cooled
2 eggs
1 tsp vanilla extract
1 cup blueberries

Preheat oven to 375F. Line a 12-cup muffin tin with paper liners. Combine the flour, baking soda and salt; set aside. In a small bowl, mash two bananas with a fork. In a large bowl, beat the remaining bananas and sugar together. Beat in butter and add the eggs, one at a time, beating well after each addition. Beat in vanilla. Mix in the dry ingredients just until blended. Fold in the mashed bananas and blueberries. Spoon batter evenly into the prepared muffin cups, filling about 3/4 full. Bake 18-20 minutes, or until a toothpick inserted in the centre of the muffins comes out clean. Remove muffins from tin and place on a wire rack to cool. Makes 12 muffins.
