Fried Mushrooms & Spinach

1/4 cup butter
1/4 cup onion, thinly sliced
1 portobello cap, cut in half and sliced
1 tbsp fresh garlic, minced
1/4 cup malt vinegar
1 cup spinach, chopped
Salt & pepper, to taste

Melt the butter over medium-high heat. Sauté onion in butter until onion is translucent. Add the mushroom and garlic, and cook until the moisture is gone from the pan and the onion starts to caramelize. Add the malt vinegar and stir to deglaze the pan. Immediately add the spinach and once it starts to wilt, remove from heat. Season to taste with salt & pepper, and serve. Yield: 1-2 servings
