Granola & Honeyed Yogurt
3 cups rolled oats
1/4 cup dates, chopped
1/4 cup prunes, chopped
2 tbsp dried cranberries, chopped
1/2 cup dried apricots, chopped
2 tbsp golden raisins
1/4 cup pecans, chopped
2 tbsp coconut (macaroon-type)
3 egg whites
3 tbsp honey
1 1/2 tsp pumpkin pie spice
Yogurt
2 cups plain Greek yogurt
1/4 cup honey
Preheat oven to 350F. For the granola: In a large bowl, mix together the oats, dried fruit, nuts and coconut. In a separate bowl, mix the egg whites, honey and spice together; whisk until very frothy. Add the egg mixture to the dry ingredients and mix until thoroughly combined. Crumble onto a parchment-lined sheet pan. Bake until the granola is firm, dried and starting to turn golden (about 25 minutes, but check periodically after 15). Remove from oven and cool on the pan. Store in an airtight container or baggie.
For the yogurt: Mix the yogurt and honey together and refrigerate for 30 minutes. Divide into four bowls and top with granola.
Yield: 4 large servings
