Salt & Vinegar Fish ‘n’ Chips
40 g bag of salt & vinegar chips, crushed
1 cup panko
1 cup flour
1 tsp black pepper
2 eggs
3/4 cup milk
1/4 cup canola oil
Mix together the chips and panko in one bowl. In a second bowl, combine flour and pepper. In a third bowl, whisk together eggs and milk. Lightly moisten the fish pieces with water, but only just enough that the flour can stick. Roll each piece in the flour, shake off the excess and dip in egg wash, then roll in salt-and-vinegar crumbs. Pat to be sure it's all coated. (If you like, you can double bread it by dipping in the egg wash and the crumbs again.) Heat the oil in a large frying pan over high heat. Once some breadcrumbs dropped in start to sizzle and bubble, turn the dial back to 3/4. Add the fish to the pan and cook until golden brown on each side. If the fish is particularly thick, finish it in a 375F oven for about 5-10 minutes, or until it's cooked through. Serve immediately with french fries tossed in steak spice. Yield: 4 servings.
