Omelette
1/4 cup onion, diced
1/4 cup bell peppers, diced
1/4 cup mushrooms, diced
4 eggs
1/3 cup milk
1/4 tsp black pepper
1/2 cup old cheddar cheese, grated
Render bacon over medium heat. Once fat is rendered, turn heat to medium-high and add veggies. Sauté 2-3 minutes, or until the onion starts to become translucent. Remove from heat. Whisk together milk, eggs and black pepper. Spray a 10" non-stick, oven proof pan with cooking spray and place over medium heat. Pour in half the egg mixture and, using a rubber spatula, push the edges toward the centre as they start to set. It will look like a big, round scrambled egg. When egg is about half cooked, top it with half the veggie mixture in a stripe down the centre. Top with half the cheese and place under a broiler until the egg puffs up, is fully cooked and cheese begins to melt. Create a cigar shape by folding one side of the egg over the filling, followed by the opposite side. Repeat steps to make second omelette. Yield: 2 omelettes
