Spicy Mango Chutney
1/2 cup onion, minced
2 mangoes, peeled & seeded,
cut into small dice
1 tbsp garlic, minced
2 tsp chili flakes (or less for a "not-so-spicy" chutney)
1 tbsp dry thyme leaves
1/4 cup dried cranberries,
roughly chopped
4 tbsp white sugar
1/3 cup rice wine vinegar
Salt & pepper
Melt butter over medium-high heat. Saute onion until translucent. Add mangoes, garlic, chili flakes and thyme. Saute until the onion and mangoes start to take on a golden colour. Add cranberries and sugar; cook until sugar starts to caramelize. When the mixture is cooked and is nearly dry and sizzling, add the vinegar and stir to combine. Reduce the liquid, if necessary, to obtain a chutney that is not runny. Season to taste with salt & pepper. Yield: 4-6 servings
