Teriyaki Broccoli Chicken Stirfry
1/2 cup brown sugar
2 tbsp soy sauce
2 tsp cornstarch
2 tbsp cooking oil
3 cups broccoli florets
1 yellow sweet pepper, cut into thin strips
2 cups sliced mushrooms
3 skinless, boneless chicken, cut into strips
cooked rice
For sauce: In a small bowl stir together water, brown sugar, soy sauce and cornstarch. Set aside. In a large skillet, heat 1 tbsp of the cooking oil over medium-high heat. Cook broccoli for 1 minute. Add pepper and mushrooms; cook for 3 to 4 minutes or until tender. Remove. Add remaining oil and cook chicken until no longer pink. Stir sauce and pour into pan with chicken. Cook and stir until thickened and bubbly. Return cooked vegetables to pan. Stir and cook until heated through. Serve over rice.
