Heritage Oatmeal Bread
1 tsp sugar
1/2 cup warm water
1/2 cup molasses
2 tsp salt
2/3 cup butter, melted
1 cup lukewarm milk
1 1/2 cups large flake rolled oats
2 eggs
4-5 cups made for bread flour
2 cups warm water
2 tbsp butter, melted
Add yeast and sugar to 1/2 cup warm water. Let rise 5 minutes. In a large bowl combine molasses, salt and melted butter. Stir in warm milk and rolled oats to mixture. Stir again and let sit for 30 min. Add yeast and 2 eggs to dough mixture. stir. Gradually add flour 1 cup at a time alternatively with the water until all has been added to dough mixture. Knead, adding a little extra water and/or flour as needed.
Rub some melted butter over dough and let sit in a warm place until it has doubled in size. Shape dough into 2 loaves. Cover and let rise again for 40 minutes or until risen to top of bread pan. Bake in a preheated oven 325F for approx. 35-40 minutes or until brown. Delicious toasted or spread with your favourite preserves.
