Escargot with Garlic & Parmesan
2 tbsp onion, minced
2 cloves garlic, minced
1 can large snails
1/4 cup white wine
1/2 cup whipping cream
1/4 tsp salt
1/4 tsp black pepper
3 tbsp Parmesan cheese, freshly grated
Preheat oven, set to broil. Melt butter over medium heat and sweat onion and garlic until onion is translucent. Add the snails and saute until they are heated through. Turn the heat on high and once the pan starts to sizzle, add the wine. Once the wine starts to bubble, add the cream and cook until it starts to reduce and thicken slightly. Season with salt & pepper. Immediately divide the snails and sauce between two ramekins and top with cheese. Broil in oven until the cheese is just melted. Serve immediately. Makes 2 servings.
