Deep-Fried Trout

1/2 cup cornmeal
1/4 cup flour
1/4 tsp cumin
1/4 tsp garlic powder
1/2 tsp celery salt
1/4 tsp black pepper
6 trout, gutted

6 trout, gutted
Preheat deep-fryer to 350°F. Mix all the ingredients together, except the trout. Rinse the fish, shake off excess water (do not pat dry) and dredge in the dry mixture. Shake off excess coating and gently place in the deep fat fryer for about 5 minutes. The coating will be deep golden brown and crispy. The flesh will flake readily when probed with a fork. Serve with mashed potatoes and grilled corn. Serves 2.
