Pineapple Sushi

Chocolate Plastique:
1 lb dark chocolate (pure)
6 1/2 fl oz corn syrup

Rice:
2 cups coconut milk
2 cups whipping cream
5 oz sugar
4.75 oz arborio/sushi/short grain rice
4 oz crushed pineapple, well drained

Filling:
Fresh pineapple, cut into matchsticks
Fresh strawberries cut into matchsticks

Plastique: Melt chocolate in a pot on the stove and mix in corn syrup. Stir until well combined. Wrap in plastic; leave at room temperature for at least 3 hours. Chocolate will be somewhat firm. Knead as you would bread dough, and roll out between two pieces of parchment till very thin. Rice: In another pot, combine coconut milk, cream, sugar and rice; simmer until rice is cooked and thick. Set aside to cool to room temperature, then mix in pineapple. Cool completely. Spread over chocolate, leaving 1/2" from edge. Filling: Arrange fruit along centre of rice mixture. Roll up entire ensemble in plastique to form a log. Allow to firm in fridge, then slice into pieces 3/4" -1" thick.
