Pineapple Upside Down Cake

Sauce/Topping:
6 pineapple rings
6 maraschino cherries, drained and stems removed
3/4 cup butter
3/4 cup brown sugar

Cake:
1/3 cup butter
1 cup sugar
1 egg
1 tsp vanilla
1 cup buttermilk
11/2 cups flour
2 tsp baking powder
1/2 tsp salt

Grease and flour a loaf pan. Preheat oven to 350°F. Line pan with pineapple rings, place cherries in the centres. Melt butter and brown sugar together, whisking until uniformly mixed. Pour over pineapple and cherries.

Cake: Cream together butter and sugar. Add egg and vanilla. Mix well. Sift dry ingredients together and add alternately with buttermilk. Once batter is thoroughly mixed, pour into pan and bake for 30-40 minutes until golden brown, and until a toothpick inserted in the centre comes out clean. Makes one loaf.
