Pineapple Jam
9 cups pineapples, peeled & diced
1/4 cup fresh gingerroot, grated
2 limes, juiced and zested
Mix all ingredients together and boil until it reaches a temperature of 225°F. Ladle jam into sterilized jars, to within 1/2" from the top. Clean rims with clean, damp cloth. Cover with sterilized lids and tighten the rings finger tight. Put in a pot of boiling water so that they are at least one inch below the surface of the water and sitting on a rack. Once the water returns to a boil, continue boiling filled bottles for 10 minutes. Remove from water and allow to cool completely overnight on a rack, undisturbed. Yield: 6, one-cup jars.
