Shepherd’s Pie

1 lb ground beef
1 small carrot, minced
1 small onion, minced
2 celery sticks, minced
1 small can corn kernels, drained
2 cloves garlic, minced
1/4 cup port wine
3/4 cup beef stock
4 cups mashed potatoes

In a large skillet, brown beef and drain fat. Add carrot, onion, celery, corn kernels and garlic; cook until onions are translucent. When the pan is very hot, add wine and stock. Cook until nearly all the liquid is gone. Spread in a pan and top with potatoes. Bake at 325°F until heated through, and potatoes are golden.
