Tasty Tomato Pork Chops
1 tbsp vegetable oil
1 lg. red or green pepper, cut in strips
1 can condensed tomato with basil and oregano soup
1/4 cup water
1 tbsp vinegar
1 tbsp packed brown sugar
1 tbsp Worcestershire sauce
3 cups hot cooked potatoes or rice
Heat oil at medium-high in large skillet. Add pork chops and cook until browned on both sides. Set pork chops aside. Add pepper strips and stir-fry, about 3 minutes. Drain fat. Reduce heat to medium. Stir in mixture of soup, water, vinegar, brown sugar and Worcestershire sauce. Heat to a boil. Return pork chops to skillet. Simmer covered, at medium-low heat, until pork is cooked through, about 10 minutes. Serve with potatoes or rice. Serves 4.
