Christmas Plum Pudding

4 cups flour
1 tbsp cinnamon
1/2 tsp salt
2 cups stale bread crumbs
2/3 cup brown sugar
1 lb suet, finely chopped
4 cups currants, cleaned and dried
2 cups seeded raisins
1 cup mixed peel, finely chopped
1/2 cup blanched almonds
1/2 cup maraschino cherries, halved
5 eggs
2 cups orange juice

Sift flour, cinnamon and salt together. Add bread crumbs, sugar and suet. Add currants, raisins, mixed peel, almonds and cherries. Beat eggs; mix with fruit juice. Add to first mixture and mix thoroughly. Place greased cloth in a glass bowl and fill with mix; do not press down. Pull four corners together and tie with a string. Place bowl in a pot of water, cover with greased brown paper which extends over side of bowl, place on lid and steam for 2 hours. Steam again approximately 2 hours before serving. Serve with thick sauce or plain custard. To keep, hang up in cool, dry and dark place. Best if over a year old.
