Turkey and Mushroom Croustades

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
20 slices of sandwich bread (crust removed)
Melted butter

Filling Ingredients:
1/4 cup butter
3 tbsp flour
1 small onion chopped (optional)
1 cup milk
1 cup finely chopped mushrooms
1/4 tsp salt
1 can flakes of turkey (drain and flake with a fork)
Few grains cayenne pepper
Freshly ground black pepper
1 tsp lemon juice
Parsley flakes

Brush both sides of each bread slice with melted butter: press gently into large muffin pans. Bake at 350°F for 15 to 20 minutes or until golden.

Filling Directions:
In a medium saucepan, melt butter. Sauté onion and mushrooms until onion is transparent. Stir in flakes of turkey, sprinkle mixture with flour and mix well. Add milk gradually, continue heating and stirring until mixture thickens and comes to a boil. Remove from heat, stir in salt, pepper, cayenne pepper and lemon juice. Fill each croustade with filling. Place on a cookie sheet and heat in a 350°F oven for 10 minutes or until bubbly. Sprinkle with chopped parsley and serve hot. Makes 20 croustades.
