Best Broccoli Soup
1 cup celery, chopped
1 cup carrots, chopped
1/2 cup onion, chopped
6 tbsp butter or margarine
6 tbsp flour
3 cups chicken broth
2 cups milk
1 tbsp minced fresh parsley
1 tsp onion salt
1/2 tsp garlic powder
1/2 tsp salt
In dutch oven or soup kettle, bring chicken broth to a boil. Add broccoli, celery and carrots; boil 2-3 minutes. Drain, reserve liquid and set vegetables aside. In same kettle, saute onion in butter until tender. Stir in flour to form a smooth paste. Gradually add the reserved broth and milk, stirring constantly. Bring to a boil and stir for 1 minute. Add vegetables and remaining ingredients. Reduce heat, cover and simmer for 30 - 40 minutes, or until vegetables are tender. Makes 6-8 servings. Use homemade broth whenever possible.
