Clam Chowder

1/4 cup salt pork, diced
1/2 cup onion, chopped
2 cups clam liquor or salt water
1 cup potatoes, diced
2 cups clams
2 cups milk (canned or fresh)
pepper to taste

Fry salt pork and remove scraps. Add onions and cook slowly. Add clam juice and potatoes, simmering until tender. Add clams, milk and seasoning. Garnish with salt pork scraps and a small piece of butter.
