Beet and Carrot Salad

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
2-3 medium beets
2-3 medium carrots
Handful of fresh parsley, chopped
1/2 cup raw sunflower seeds, shelled
1/4 cup olive oil
4 tbsp tamari or soy sauce
Juice of half a lemon
1 tbsp honey or maple syrup

Grate beets and carrots into a bowl and toss with chopped parsley. In a smaller bowl combine olive oil, tamari or soy sauce, lemon juice, and honey or maple syrup for dressing. Sauté sunflower seeds in a pan over medium heat until toasted; add to salad, toss with dressing and serve.
