Chocolate Cheesecake Cupcakes

8 oz cream cheese
1 egg
1 cup + 1⁄3 cup sugar
pinch salt
1 cup chocolate chips
1 1⁄2 cups flour
1⁄4 cup cocoa
1 tsp baking soda
1⁄2 tsp salt
1 cup water
1⁄2 cup salad oil
1 tsp vinegar
1 tsp vanilla
mini cupcake papers

Mix cream cheese, egg and 1⁄3 cup sugar together in a large bowl; add a pinch of salt and cream together. Add chocolate chips and set aside. In a separate bowl, mix together flour, remaining sugar, cocoa, baking soda and salt. Set aside. Into a third bowl, pour water, salad oil, vinegar and vanilla; add to flour mixture and stir until moistened. Line mini-muffin pan with cupcake papers. Fill each 1⁄3 full with chocolate batter and heap about a teaspoon of cream cheese mixture on top. Bake at 350°F for 20-25 min.
