Smoked Salmon Mousse

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
140 g smoked salmon
340 g cream cheese (lg block)
6 tbsp whipping cream (or milk)
1 tbsp fresh lemon juice
dash Tabasco sauce
1 1⁄2 green onions, finely chopped
capers

Puree smoked salmon in food processor. Add cream cheese, whipping cream (or milk), lemon juice and Tabasco. Process until smooth. Pulse in green onions and capers. Serve right away or refrigerate until needed. Tastes great on baguette, crackers or rolled up in crepes or tortillas. Makes about 2 cups of dip.
