Rabbit Stew
6 medium potatoes
1 small turnip
3 or 4 carrots
2 large onions
Fat back pork
Salt & pepper
Heat skillet and cover bottom with slices of fat back pork and fry until golden brown. Add rabbit which has been cut into sections and the chopped onions. Brown for 15 minutes, turning to prevent burning. Add water and simmer for about 1/2 hour. Then add chopped carrots and turnip and simmer for another hour. The potatoes may be added during last 20 minutes of cooking period. Dumplings may be added to stew last 15 minutes of cooking period, or the stew may be placed in an oven dish and covered with pie crust. If desired, the juices may be thickened as a gravy.
