Blueberry Bread Pudding
1/2 cup brown sugar
4 eggs
3/4 cup sugar
2 tsp vanilla
2 cup milk
8 cup egg bread, cut into 1/2-inch cubes
2 cup blueberries
2 tbsp sugar
1/4 tsp cinnamon
Preheat oven to 350 degrees F. Pour melted margarine into an 8 cup (2 L) shallow baking dish, brushing to coat the sides. Sprinkle brown sugar over bottom of baking dish. In a medium bowl with an electric mixer, blend eggs, sugar and vanilla until foamy. Add milk and continue mixing until smooth. Place bread cubes in a large bowl, pour in egg mixture and toss until bread is evenly soaked. Add blueberries and toss to mix. (Not all egg mixture will be soaked up.) Turn into the preprepared baking dish. Stir together 2 tbsp sugar with cinnamon. Sprinkle over pudding. Bake 45 min. Increase oven temperature to 400 degrees F and continue baking 10-15 min. or until the pudding is puffed in the middle and nicely browned on top. Serve warm or at room temperature with ice cream. Serves 8.
