Tuna Pitas

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
2 cans tuna, drained
2 green onions, thinly sliced
1/3 cup mayonnaise
2 tbsp sweet relish
1 tsp curry powder
1 tsp lemon juice
1/2 cup grated sharp cheddar
Salt and pepper, to taste
4 leaves lettuce
4 whole-wheat pitas

In a bowl, mix together all ingredients, except lettuce and pitas. Cut pitas in half and place half a lettuce leaf in each pita pocket. Stuff pockets with even amounts of tuna mixture.
