Maple Nut Cookies
3/4 cup butter or margarine
1/4 tsp maple extract
1 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 cup pecans, chopped
Beat brown sugar, butter (or margarine) and maple extract in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour, baking powder, salt and pecans. Shape into a roll 12 inches long. Wrap and refrigerate about 2 hours or until firm. Heat oven to 375ºF. Cut roll into 1/4-inch slices. Place slices 2 inches apart on ungreased baking sheet. Bake 8-10 min. or until edges are golden brown. Remove cookies from baking sheet and place on wire rack to cool.
